I fell in love at the seaside...

Last week me and Chris decided to get on the train from Flitwick (where we live) and go to Brighton (the very last stop on the train line). We were absolutely blessed with sunny weather and we had such a nice day. It is the first time that we have been to the seaside together and is actually the first time in a long time that we have managed to schedule in an entire day together. We love spending time with family and friends but it was so nice to have some special time together.  We went to the Sealife Centre, mooched around on the pier, walked around the Brighton Pavillion, paddled in the sea, had fish and chips and a nice ice cream to finish off the day with.  The seaside is my favourite place to be and I felt completely relaxed for the first time in aaaagggess! Joe Wicks' Paella

I was bought Joe Wicks' Lean in 15 cookbook by my lovely mum a few weeks ago. Last week, I had my friend Emily over for dinner and I thought it would be a perfect opportunity to set myself a goal of cooking a freshly prepared and healthy meal for us. I chose to cook the paella. First of all I should add that this was never meant to be a full on paella that you would expect to eat in Spain. The idea of Joe's recipes are that they are quick, easy and fairly cheap for everyone to make. We had chicken and prawns as our main ingredients. I threw some peppers, onions and peas in too. Chucked in a pint of stock with Tumeric and Saffron (most expensive spice EVER apparently, but you only need a tiny bit so the pot gets a lot of use). I then put some Uncle Ben's vegetable rice in the microwave, zapped it and then bung it in the pan. I used my wok for this as I needed a big saucepan and this was the biggest I could find. A new blog on a new domain...Starting over

Isn’t it funny how life just gets in the way?! The last two months have been a total whirlwind. We’ve moved, I’ve got a new job (my teaching career is starting earlier than I thought it would!), I’ve watched two of my friends get married, I’ve worked at Summer School in Cambridge for a month AND I’ve started my own business! Last night I got very frustrated with myself that I hadn’t kept up with my blog. But then I sat and thought about it and decided that sometimes we just have to give ourselves a  break . Sometimes life really does just get in the way and priorities change slightly. Saying that though, I would be lying if I said I hadn’t had  the time  to write. Of course I have had time. I just haven’t used my time to write. I have allowed my time to be filled by other things. Instead of taking 30 minutes out of my day to write, I have sat and scrolled through Facebook, watched a bit of pointless TV, listened to the radio etc. I know that writing on my bl...

I'm Amy I'm 21 and I have 1090680 things that I want to talk about with you all. Growing up with a less than simple childhood and teenage years I learnt that writing things down always helped make sense of what was going on in my head. With the growing use of social media, bloggers and vloggers I have become blissfully aware of the beauty of allowing other people into your crazy world by recording it on the internet.
